Tuna Cakes with Goat Cheese and Sweet Corn

This recipe is perfect when you think you have nothing to make for dinner yet you end up having all these ingredients in your cupboard and fridge. This one is great for an excellent easy dinner, leftovers for lunch, or you can even make small ones for a yummy appetizer or tapas meal. The best thing about this recipe is that you can have fun with it and change up some of the ingredients each time you make them. Enjoy xx

Tuna Cakes with Goat Cheese and Sweet Corn

 

This recipe will make about 8 – 9 cakes

 

2 cans of tuna

1 big tbsp of light mayo

1 tbsp chopped fresh dill

1 tbsp chopped fresh parsley (both can be dried if you like but fresh always tastes better)

2 tbsp of goats cheese

Some corn and some red beans (or any veg you like)

1 green onion chopped

dash of hot sauce

1 lemon to use the ride and lemon juice

1 egg

1/2 cup and a little more of panko or bread crumbs

Salt and pepper

 

In a mixing bowl mash all ingredients together until mixed and to the texture that you can form patties. Roll in extra panko or bread crumbs and fry up in a hot pan with some olive oil until crispy and brown on the outside.

 

Serve with a green salad
