I am sure I have told you all before that my Mom Joanne is an amazing cook. This weekend we had a going away dinner for my brother Brian and as always my parents out did themselves with the amount of food they had (you will never leave my parents home still hungry). The one dish Mom made that has always been a family favorite was her Grilled Spicy Thai Chili Shrimp. This is an easy recipe to follow and really, this marinade can be used on any type of meat from flank steak to chicken if you don’t want to use shrimp.
Spicy Thai Chili Marinade
1/4 cup chili garlic sauce or Sambal Oelek (the spicy one)
1/4 cup fish sauce
1 tbsp sesame oil
1 tbsp grated fresh ginger
2 crushed garlic cloves
bunch of fresh cilantro
Marinate meat for a least an hour – throw on the grill and cook to your liking. Top with chopped fresh cilantro and fresh squeezed lime juice.
My Mom always serves this with a mango or grilled pineapple salsa – delish! Serve as an appetizer or as a main dish. It is mos def a crown pleaser. Its spicy, salty and has an amazing zing that keeps you wanting more. I’m telling you – you have to make this!
