Quick Pickled Radishes

I love pickled anything – beets, cucumbers, onions, carrots and the list goes on. The other day I looked in my fridge and still had a huge bushel of radishes I had picked up from the market a week before and thought, I should pickle these. I love the pickled radishes you get at Korean BBQ and the ones that usually come with some Vietnamese dishes. I was making steak rice wraps that night for dinner and these pickled radishes were going to be the perfect condiment of salty, sour and crunchy to go on top.

Here’s how I made them

Quick Pickled Radishes

1 1/2 cups radishes

10 fl oz vinegar

10 peppercorns

2 teaspoons salt

2 teaspoons sugar (optional, or use honey, stevia, etc.)

1 small onion

1 bay leaf

Slice up radishes and onion. Bring vinegar, peppercorns, sugar and salt to a boil.  Place radishes, onion and bay leaf into a clean mason jar.  Pour vinegar mixture over radishes.  Refrigerate overnight.  Makes 1 pint.

      Yah they were so easy – and delish! Im sure you could do that with carrots or slices of cucumber for the quick pickle.. awesome – thanks for the comment!

    huh! Always thought I’d be up to my elbows in vinegar and have to spend a weekend in the kitchen to pickle anything. This is awesome!
