Ontario Summer Pea Spread

You need to get out to a farmers market and pick up some Ontario summer peas. This is the time of year I look forward to when these babies are in season – I love peas in the pod! I picked some up at the Trinity Bellwoods Farmers Market last Tuesday and steamed them with a little butter, salt and pepper – that’s my fave way to eat them. I ended up having some peas leftover so over the weekend I made an amazing summer pea puree and used it as a spread on pita chips. It was so yummy, fresh and light – the puree made a perfect snack!

Summer Pea Spread

1 pint of steamed summer peas

1 clove garlic

fresh juice from half a lemon

1/4 cup olive oil

salt and pepper

In a food processor blend all the ingredients together until smooth and spreadable. Have it on a cracker, pita chip, or homemade crostini.

Enjoy – this is delicious!!
