Maple Roasted Corn Salsa

I just have to share this amazing recipe with you – I made it over the weekend to bring to a BBQ and everyone was obsessed. Its a perfect snack to make with all the tomatoes from your garden that you might not know what to do with. I mixed up cherry tomatoes, yellow sun golds and Roma tomatoes for this salsa, all from my garden.

To make the Maple Roasted Corn Salsa you need to start with about 2 cups of frozen corn on a baking sheet mixed with 1 tbsp of maple syrup, olive oil, salt and pepper – roast for 30 mins at 325 degrees. While the corn is roasting, mix together about 2 cups of chopped tomatoes, 1 cup of chopped fresh cilantro, 1/2 cup chopped red onion, 1 jalapeno seeded and chopped, 2 cloves chopped garlic, fresh juice from 1 whole lime, cumin, chili powder, and salt and pepper to taste. Mix in roasted corn and let sit in the fridge for about 1 hour before serving – be careful this salsa is addictive!!
