Kale Caesar Salad with Silken Tofu Dressing

I had the biggest craving for chicken Caesar salad last week and finally the time came to satisfy it. I once read a recipe where they used silken tofu for the base of a Caesar dressing instead of mayo. This popped into my head on the way to the store so I picked a up a package. It’s a great way to add protein to a meal and it really gives your dressing that creamy texture without all the calories. Bonus!

In a small food processor blend up the follwoing ingredients:

1 clove garlic

salt and pepper

Tbsp Dijon mustard

1 package of soft or silken tofu

Juice from half a lemon

Small handful of Italian parsley leaves

5 dashes Worcestershire sauce

Dime sized amount of Anchovy paste

Olive oil

Graded parmasan cheese


Toss with roughly chopped washed kale and top with chicken and homemade croutons for a full meal.

Yum, right?
