Get Your Super Powers with Kale!

Kale is one of the world’s super foods. It is an excellent source of many Vitamins and Minerals such as Calcium and Magnesium which will help build strong bones. It is high in Vitamin A and C which makes it a fantastic antioxidant. It is also very easy to cook when you have the right recipe and this is why I lalalove it so much! This recipe is super easy and so fast to make. The smells that fill the house are intoxicating and a perfect tease for the wonderful side dish you are about to enjoy.

Sweet and Savory Kale with Almonds and Cranberries

One bunch of Kale

1 small onion chopped

1 clove of garlic minced

¾ cup of chicken stock

1 tbsp Dijon mustard

1 tbsp of honey

2 tbsp cider vinegar

Salt and pepper

Handful of dried cranberries

Handful of toasted slivered almonds

Wash the kale and rip into small – medium piece and put to the side.

In a large saucepan sauté the chopped onions until transparent and then add the garlic. Once you can smell the garlic add in the Dijon mustard, honey, vinegar, and chicken stock. Stir until everything is combined and bring to a boil then add the kale and cook covered for 5 mins. You will then add the dried cranberries and almonds and simmer uncovered for about 10mins.

This goes so well with fish or any meat

Just to give you an idea of how versatile this recipe can be, the other day I made the kale and mixed it with pan fried perogies in a bowl. It was an easy and quick dinner and sooo very tasty.
