You will most def want a beer after you taste these nuts! The Honey Roasted Curried nuts recipe in the early summer issue of the LCBO Food & Drink mag are so tasty. I came across this recipe yesterday as I was sitting in the afternoon sun intently reading though the entire issue. This recipe stood out to me like most of the Food & Drink recipes do because the picture practically leapt off the page and said “make me and eat me”. These nuts are so easy to make, addictive and you probably have all the ingredients already. They are a perfect snack and because they are salty, sweet and spicy they will go so well with a nice cold one.
Honey Roasted Curried Nuts
1/2 cup honey
2 tbsp butter
1 tbsp garam masala
4 cups of salted mixed nuts (I used almonds and peanuts because that what I had on hand)
1 tsp salt
Preheat oven to 325 degrees
In a large frying pan melt butter and honey together over medium heat. Cook until butter had melted and mixture is bubbling. Continue to cook 2 -3 more mins until it starts to turn a caramel colour. Remove from heat. Add garam masala and cayenne pepper, then nuts. Stir until nuts are coated well.
Spread in a single layer onto a baking sheet lined with parchment paper. Bake until nuts are toasted, about 15 mins. Cool slightly and toss with salt. Cool completely, stirring occasionally to break nuts into clumps.
