Erin want a Cracker?

We had a party here this weekend for my roommates birthday and a friend of ours made these amazing homemade crackers, I was like WO these are amazing! I have always wanted to make my own homemade crackers and didn’t even realize how easy it was until she sent me the recipe yesterday and I took on the challenge. These crackers didn’t take long and the coolest thing is that they are gluten free and soo very tasty!!

I wanted to make my boyfriend’s parents a homemade gift to give to them this weekend for Easter so I thought this would be a perfect homemade snack to bring along with a jar of my homemade baba ganoush. Enjoy the recipe below!

Parsley  Onion Crackers

3 egg whites

2 cloves of garlic, grated

1/3 cup of finely chopped onion

1/4 tsp salt

1/4 black pepper

1/8 baking powder

2 tbsp finely chopped fresh parsley

2 cups of almond flour

Preheat over to 350 degrees and grease your cookie sheets with oil

In a deep bowl beat the eggs whites until they are stiff. Put aside

In another bowl mix together the garlic, onion, salt, pepper, baking powder, fresh parsley, and almond flour.

Slowly fold in egg whites, dough should be moist but not sticky

Roll small balls out of the dough and press flat on the cookie sheet, bake for about 20 mins or until crackers start to brown.

    They look amazing! Great blog! Try using rye next time, it makes for great dipping crackers

    I usually make them for the holidays using an assortment of seeds to flavor them — caraway, fennel and sesame are my favorites. Everyone always asks for the recipe… Thought I’d share.. I love food too! 🙂

    1 pint of buttermilk
    1/2 cup sugar
    1/2 cup melted butter
    1 tsp. salt
    7/8 tsp. baking soda
    Coarse rye flour
    Caraway, sesame, fennel or other seeds if desired
