Curry Chicken Salad

One of my favorite things I used to always get from Whole Foods Market was their pre-made curried chicken salad. I say used to because now I have started to make my own and this recipe I have put together I think is even better than theirs and WAY cheaper!

 

Curry Chicken Salad

2 large seasoned breasts of grilled chicken chopped

1 big scoop of light mayonnaise

1/3 cup toasted slivered almonds

1/3 cup of currants

2 green onions chopped

1 stalk celery chopped

Tbsp mango chutney

Tbsp curry powder

Tsp turmeric powder

Salt and pepper

Combine everything and a large mixing bowl and spread onto toasted whole wheat bread.

Should make 4 sandwiches
