Cheesey Broccoli Bites and More Bite Sized Goodness

I was at the grocery store one day and I saw these pre-made packaged broccoli bites and I thought these would be a yummy snack at home or easy to bring to work for lunch, so I picked them up. Then I saw the price.. I thought $4.99? Really? It got me thinking how easy it could be to just make them at home – so I did, and it was easy peasy and they were delicious.

See below for another great recipe and ideas if you like the bite sized goodness. Everything just tastes better bite sized doesn’t it? You can really take this recipe and have fun with the ingredients you love.

 

Broccoli Cheese Bites

1 head of broccoli with stems

½ to a ¾ cup of grated cheddar cheese

1 cup of panko crumbs or bread crumbs 

Salt and pepper to taste

1 egg

1. Rinse and chop broccoli into chucks – then steam broccoli in a pot of boiling water until you can almost pierce a fork through it, drain and let cool. Once cooled chop broccoli into small almost minced pieces – you can do this in a food processor as well, I do it by hand because I like a few broccoli chunks for texture – it’s up to you.

2. Combined all ingredients together in a large mixing bowl only using ½ cup of the panko and saving the other 1/2 cup to the side for later. Mix until everything is incorporated and a good texture to form small balls or patties.

3. Put the ½ cup panko you saved into a shallow dish and place each patty in dish to cover with the crumbs.

4. Place all the patties on a parchment lined cookie sheet and bake flipping once for about 15 – 20 mins at 350 degrees.

Should make about 15 – 18 patties

 

Tex Mex Chicken Bites

1 ½ cups of cooked finely chopped chicken

1/3 cup of chopped pickled jalapeños

½ cup of grated cheddar cheese (more if you would like)

Some chopped fresh cilantro

Pinch of cumin

1 egg

1 cup of panko or bread crumbs

1. Combined all ingredients together in a large mixing bowl only using ½ cup of the panko and saving the other 1/2 cup to the side for later. Mix until everything is incorporated and a good texture to form small balls or patties.

2. Put the ½ cup panko you saved into a shallow dish and place each patty in dish to cover with the crumbs.

3. Place all the patties on a parchment lined cookie sheet and bake flipping once for about 15 – 20 mins at 350 degrees.

Use sour cream as a dip

Should make about 10 – 12 bites

** Use the same method and make some Buffalo Chicken Bitesby using the chopped chicken, some chopped green onions, a mix of blue and cheddar cheese, and at least 3 tbsp of Franks hot sauce. Mix with the panko and 1 egg, form into small patties and cover each with the extra panko and bake em up!!
