Baked Balsamic Sundried Tomato Brie

This is one of my favorite recipes I have. Serve it as an appetizer or its perfect served as a yummy treat alongside a homemade bowl of soup. The best thing about this one is that it is so easy to make and absolutely ridiculously delicious – it’s sweet and savory and garlicky – OMG!  Enjoy

Baked Balsamic Sundried Tomato Brie

1 full brie round

Olive oil

1 large clove of garlic

About 10 chopped up sundried tomatoes

1 leek sliced (just the white part) ** use shallots as substitute if you need to

1/3 cup of balsamic vinegar

Chopped basil – optional

In a sauce pan sauté the chopped leek in the olive oil until soft, add garlic and sundried tomato and sauté a little longer until you can really smell the garlic cooking. Then add the Balsamic vinegar and cook until the vinegar reduces a bit and becomes syrupy coating the other ingredients.

Place the brie round on a greased baking dish and pile the sun dried tomato mixture on top. Bake at 350 degrees for about 8 mins until brie is heated through and melty inside.

Serve hot right away with sliced pieces of baguette
